Boy, it’s been hot. I hope you all are staying cool. This week I’m going to do some that are easy and simple.

GARDEN VEGETABLE BAKE

1 cup chopped zucchini

1 large tomato chopped

1 medium onion chopped

1/2 cup grated parmesan cheese topping

1/2 cup Bisquick

1 cup fat free skim milk

1/2 cup fat free egg product or 2 eggs 

1/2 t salt

1/4 t pepper

Heat oven to 400 degrees. Lightly grease an 8x8x2 square dish. Sprinkle zucchini, tomato, onion and cheese in the dish. Stir the remaining ingredients in until blended. Pour vegetables and cheese. Bake uncovered for about 35 minutes. Let stand five minutes before serving. Makes six servings. (Note: for chicken bake, use two cans chunk chicken, drained or one cup cooked chicken shredded with the vegetables. 

IMPOSSIBLY EASY HAM AND SWISS PIE

1 1/2 cups fully cooked ham, cut up

1 cup shredded Swiss cheese

4 medium green onions

1/2 cup Bisquick

1 cup milk

1/4 t salt

1/8 t pepper

2 eggs

Heat oven to 400 degrees. Grease 9x1 1/4 inch pie plate. Sprinkle ham, cheese and onion on plate. Stir in remaining ingredients until blended. Pour into pie plate. Bake 35 to 40 minutes. Let stand five minutes before serving. Makes six servings.
