Well, we are eight days into the new year. How many of you said you were going make changes in 2020 and have broken them all ready? That’s why I don’t make them, because I can never keep them. Well, this week going to do some I hope you enjoy. 

 

LOW FAT LEMON PIE

1 -16 ounce can frozen lemonade

1 can condensed milk

2 - 8 ounce packages of light cream cheese, softened

1 - 16 ounce Cool Whip 

2 vanilla wafer crusts

Whip together lemonade, condensed milk and cream cheese blending thoroughly. Fold in cool whip. Put in vanilla wafer crust and chill. Makes two pies.

 

CHICKEN CASSEROLE AND BISCUITS

1/4 cup butter

1/2 cup Bisquick 

1/2 t salt

1/4 t pepper

2 cups milk

2 cups cooked chicken  

2 cans peas and carrots

1 can biscuits

Melt butter in sauce pan. Blend in baking mix and seasonings. Cook over low heat, stirring until smooth. Remove from heat and stir in milk. Heat to boil — one minute, stirring the whole time. Stir in vegetables. Heat and pour into a greased dish. Place biscuits on top and bake at 400 for 15 minutes until brown.
