This week, I’m going to do some that are easy. Hope you will enjoy.

BACON, EGG SALAD CROISSANTS

6 hard boiled eggs, chopped

½ cup chopped celery

½ cup mayonnaise

1 t mustard

¼ t salt

1/8 t pepper

1/3 cup fried, crumbled bacon

4 lettuce leaves 

4 tomatoes, sliced

4 croissants, sliced

In a bowl, combine egg, celery, mayonnaise, mustard, salt, pepper and fold in the bacon. Place a lettuce leaf, tomato slice and ½ cup egg on each croissant. Makes four.

HAM STROMBOLI

1 – 11 oz. tub ref. crusty fresh loaf

4 slices American cheese

½ pound deli ham, sliced thin

1 cup shredded cheddar cheese

1 T butter

1 T grated Parmesan cheese

Unroll dough at seams. Pat dough into a 12x14 rectangle. Place the cheese, ham and the cheddar cheese on dough. Roll up tightly from the short side down on a 10x13 baking dish. Brush top of loaf with butter. Sprinkle with Parmesan cheese. Bake at 375 for 20 minutes or until golden brown. Makes four to five servings. 

CRAB MEAT CASSEROLE

16 ounces cream cheese

4 cups cheddar cheese

2 – 8 ounce cans of crabmeat

8 flour tortillas

½ cup shredded cheese

Combine first three ingredients. Put mixture into tortillas and roll up. Put seam side down into 9x13 pan. Sprinkle with cheese. Bake at 350 for 20 minutes.
