Well, today starts a new year. I wish for you all good health and may it be the best year and all good things in 2020. This week I’m going to do some I never heard of, but I’m going to try. Did you do your black eyed peas, greens, side meats and cornbread for New Year’s Day for your good luck?  

BLACK EYED PEA SKILLET DINNER

1 pound ground beef

1 and 1/4 cups chopped onions

1 cup chopped green peppers

2 - 16 ounce cans black eyed peas drained and slightly chopped

3/4 t salt

1/2 t pepper

Cook the ground beef, onions and green peppers over medium heat until meat brown and crumbled. Drain. Add the remaining ingredients. Bring to a boil and reduce heat. Simmer 30 minutes. Makes six servings.

VEGETABLE CHEESE TOPPER FOR POTATOES

1 ounce plain low fat yogurt

1/2 cup ricotta cheese

1 T grated cucumber

1 T grated green pepper

1 T grated onion

1/4 t salt

1/8 t pepper

Combine all and mix well. Cover and chill 2 to 3 hours. Then spoon over baked potatoes. Makes 1 1/2 cups.
