Well, this week I’m going to do some easy lunches for the kids.

8 oz. cream cheese, softened

1 ½ T sweet pickle relish

5 slices of ham, diced

¼ t onion powder

1 tube crescent rolls (8 rolls in each tube)

Preheat oven to 375 degrees. Combine cream cheese, relish, ham, onion powder in a bowl and mix well. Open the crescent rolls and separate into 8 triangles. Spread 2T of ham mixture on each roll from the short end to the opposite end. Place the rolls on ungreased baking sheet. Bake in the oven for 12 minutes until brown.

48 whole graham crackers

2 T margarine

½ cup corn syrup

1 ½ cup milk chocolate chips

2 c miniature marshmallows

Grease the 9x9 inch baking pan. Put the graham crackers in a plastic bag. Crush them using a rolling pin.

Place the margarine, corn syrup and chocolate chips in a bowl. Cover with waxed paper. Microwave on high two minutes. Stir well. Microwave 1 minute on high until it boils. Mix in the crushed crackers. Stir in marshmallows. Press in the baking pan. Let stand at room temperature. Mix well until becomes hard and chewy. Carefully cut with a knife, dipping the knife in hot water after each cutting. Cuts into 36 squares.

The summer is moving right along. Until next time, like I always say live, laugh and love, and remember to spend time with family and friends, and God bless you all.
