This is such crazy weather we are having — cold then warm. But the good part is they say the groundhog did not see his shadow, so maybe we will be having warmer weather soon. This week I hope you enjoy the recipes. 


1 pound ground beef or turkey

2 - 28 ounce cans tomato sauce

1/4 t garlic salt

1 envelope spaghetti sauce mix

1 cup ricotta or cottage

1 egg

1/2 cup parmesan cheese, grated

6 ounce package mozzarella cheese shredded

1 - 8 ounce package lasagna noodles

Brown the meat and drain. Add the next four ingredients. Bring to a boil, and then simmer 10 minutes. In small bowl mix ricotta cheese or cottage cheese, egg and parmesan cheese. Put little of the meat in bottom of 9x13 dish, then keep alternating layers until all used up. Top with remaining meat sauce. Bake at 350 degrees for one hour until noodles are done. Sprinkle with mozzarella cheese. Cover with foil and let stand 10 minutes before serving. Serves eight to 10.

1 box yellow cake mix

4 eggs

1 cup buttermilk

1 cup brown sugar

1 t cinnamon 

1/2 cup pecans

Mix first four ingredients well. Pour into a greased 13x 9 dish. Combine brown sugar, cinnamon, and pecans and swirl into batter. Bake at 300 for 40 to 60 minutes. 



1 cup powdered sugar

2 T milk

1 t vanilla

Mix and pour over cake.
