I hope you all had a great week. I had the pleasure to go to Jefferson Forest to watch the granddaughter and other Comet cheer girls in competition. They didn’t win, but they did great. I’m always proud of them. This week I’m going to do some I hope you enjoy.
PEPPER JACK MELTS
8 slices bacon
4 T peppercorn ranch salad dressing
8 slices rye bread
3/4 pound thin sliced deli chicken
4 slices pepper jack cheese
2 T butter
Place four bacon strips at a time in microwave. Late and cook until crisp. Spread salad dressing on four slices of bread. Top with the chicken, bacon, cheese, and remaining bread. In large skillet or griddle, melt butter over medium heat. Cook sandwiches on both sides until bread is lightly toasted and cheese is melted. Makes four.
This one is for you Kelly. Thought of you when you’re camping and fixing for those hungry boys and the little one.
CONFETTI SCRAMBLED EGGS
6 T half and half cream, milk or water
1/2 t salt
1/2 cup chopped green or red bell peppers
1/4 t black pepper
2 green onions chopped
2 T butter
1 cup shredded cheddar cheese
In a bowl, beat the eggs, cream, salt, pepper until combined. Set aside. In large skillet, saute the pepper and onions in butter for two minutes.
Add the egg mixture. Cook and stir over medium heat until eggs are completely set. Remove from heat. Stir in cheese. Serve immediately.
