This week, I’m going to do some that are about the same. I hope you will enjoy. 

Squash Casserole

1 qt. cooked, drained squash

1 small onion, chopped

1 chopped green pepper

½ jar chopped pimento

1 stick melted butter

1 can cream chicken soup

1 bag dressing

Mix together squash, onion, pepper, pimento, butter, cream chicken soup and most of the dressing. Sprinkle rest of dressing on top of casserole. Bake at 350 degrees for about 35 minutes. 

Cheesy Squash Casserole

1 T vegetable oil

6 medium squash, sliced thin

1 medium onion, sliced thin

1 T butter

½ cup Parmesan cheese

1 cup shredded sharp cedar

½ cup sour cream



1 sleeve crackers, crushed

Pre-heat oven to 350 degrees. Heat oil in skillet over medium heat. Saute squash, onion and butter. Transfer to bowl and stir in Parmesan, cheddar, and sour cream. Add salt and pepper to taste. Pour mixture in a 3-quart dish and top with crushed crackers. Bake 20 minutes until bubbly.
