This is the week we get to spend time with family on Thanksgiving and be thankful for all of our blessings. This week I’m going to do one you can make if you have leftover turkey.
TURKEY PICANTE LASAGNA
2 eggs, beaten
1 cup whipping cream
1 - 8 ounce plain yogurt
1 cup shredded Monterey Jack cheese
1 T Italian seasoning
8 ounces uncooked lasagna noodles
1 1/2 cup Picante sauce
1 pound cooked turkey chopped
1/4 cup grated Parmesan cheese
Combine first five ingredients. Layer half each of noodles, sauce, and turkey in a 9x13 dish. Repeat. Then top with yogurt mixture. Top with Parmesan cheese. Cover and bake at 350 degrees for 25 minutes. Uncover and bake 15 more minutes. Let stand 10 minutes before serving. Serves six.
SWEET POTATOES AND APPLES
3 small sweet potatoes
3 large apples sliced (your choice of apples)
1/2 cup brown sugar
1/3 cup margarine or butter
1/4 cup water
Cook potatoes 20 minutes. Cool, then peel and slice. Arrange potatoes and apples in 2-quart dish. Combine sugar, butter, 1/4 cup water and bake at 350 for 30 minutes, basting at 20 minutes. Serves six.
