I’m loving the cooler weather. It’s nice to sit on the porch and not be so hot this week. I hope you enjoy these!

BACON PEA SALAD

4 c frozen peas – thawed

½ c sharp cheddar cheese

½ c Ranch dressing

1/3 c red onions, chopped

¼ t salt

¼ t pepper

4 strips bacon, cooked and crumbled

Combine the first six ingredients. Toss to coat. Refrigerate covered up at least 30 minutes before serving. Stir in bacon just before serving.

CINNAMON APPLE CAKE

2 c apples, peeled and chopped

2 c all purpose flour

1 c vegetable oil

1 c dark brown sugar

½ c white sugar

½ c walnuts chopped

2 large eggs

1 T ground cinnamon

1 t vanilla

½ t baking powder

½ t baking soda

½ t salt

Preheat oven to 350 degrees. Grease a 9-inch round cake pan. Mix together eggs and oil in bowl. Once mixed, add cinnamon, white and brown sugar and vanilla. Mix well. Then gradually add flour, salt, baking soda and baking powder. Mix well. Then fold in apples and nuts. Pour batter into pan. Bake 45 minutes. Let cool 15 minutes before serving.
