For the next few weeks, I’m going to do something I did a few years back. Some ladies in my church did these recipes, and they have now passed on. I hope you enjoy. 

The first one was by Eunice Mayo.

CARROT SALAD

3 cups shredded carrots

½ cup shredded coconut

½ cup raisins

½ cup sour cream

½ cup mayonnaise

1 T. lemon juice

Salt to taste

Mix together carrots, coconut and raisins. Combine sour cream, mayonnaise and lemon juice; add to carrot mixture; stir well. Chill before serving.

CHERRY SUPREME SALAD

1-21 ounce can cherry pie filling

1-20 ounce can crushed pineapple

1 (14 ounce can) Eagle Brand milk

1-9 ounce carton cool whip

Mix all together and put in refrigerator until firm. May be frozen.
