The weather is still a little crazy — warm one day and cool the next. I’m hoping it won’t be long before it’ll be warmer. This week I’m going to do some I hope you like.
CHEESE BURGER CASSEROLE
1 pound hamburger
1 onion chopped
1 8-ounce package cheese slices
1 1/2 cups ketchup
1/4 cup mustard
3/4 t salt
1/8 t pepper
1 can refrigerator biscuits
Combine hamburger and onions in skillet. Cook until meat is slightly brown. Drain. Add salt, pepper, ketchup and mustard and heat thoroughly. Put in casserole dish. Cut cheese into strips and place on top of meat. Top with the biscuits. Bake 425 degrees for 20 to 25 minutes or until the biscuits are golden brown.
SUNSHINE HAM AND PASTA
1/2 cup chopped onions
2 T butter
2 T flour
1/4 t salt
1 1/2 cups undiluted evaporated milk
3/4 cup water
1 1/2 cups shredded cheddar cheese
1 to 2 t prepared mustard
4 cups hot cooked macaroni drained
1 cup julienne strip fully cooked ham
1/4 cup chopped green peppers
Saute onions in butter in a large saucepan until tender. Stir in flour and salt. Gradually add evaporated milk and water. Cook over medium heat stirring constantly until the mixture just comes to a boil and thickness. Remove from heat. Stir in cheese until melted. Add mustard, macaroni, ham and green peppers. Heat to serving temperature. Makes about 5 1/2 cups.
