Well, today is the 16th of December. If you have shopping to do, you better get to it, because Christmas is coming in a few more days.
This week I’m going to do some I hope you like.
MINI CHRISTMAS CHEESE CAKES
3 – 8 oz. cream cheese, softened
1 ½ c sugar, divided
5 eggs
1 ½ t vanilla
1 c sour cream
2 cans cherry pie filling
Beat together cream cheese and 1 cup sugar. Add eggs, one at a time. Beat well after each one. Add the vanilla and mix again. Pour into mini foil cups, filling ¾ full. Bake 20 minutes at 350 degrees. Remove from oven and let stand 5 minutes. Combine sour cream and remaining ½ cup sugar to each one with ½ t of mixture. Return to oven for 5 minutes. When cooled, top each cheesecake with one cherry and little of filling. Keep in refrigerator. Makes eight dozen.
CHOCOLATE CHESS PIE
5 ounces can evaporated milk
1 ½ c sugar
2 eggs, beaten
¼ c melted butter
3 T cocoa
1 t vanilla
1/8 t salt
9 inch pie crust
Combine first seven ingredients. Pour into an unbaked pie crust. Bake at 350 degrees for 40 to 45 minutes or until set. Makes eight servings.
