It’s going to be hot, but stay cool. This week I’m doing one that really is good. 

CHEESE POTATO SAUSAGE CASSEROLE 

(Use the big smoked sausage)

3 c peeled potatoes, cubed (cook until tender)

Cook sausage until tender in little oil (olive oil)

4 T butter

Salt, pepper to taste

4 T flour

2 c half-half

½ lb. Velveeta cheese, cubed

½ c sharp cheddar shredded cheese

¼ t paprika

In pan, cook sausage in oil. Spray a 9x13 baking dish. Put potatoes in with cooked sausage. Add butter, flour, half and half together. Whisk, then stir in cheese. Pour over potatoes and sausage. Sprinkle with more cheese. Bake for 35-40 minutes. 

OATMEAL CREAM PIE CHEESECAKE

Crust

1 ½ box oatmeal cream pies

Crush some, cut some in ¼

 

Cheesecake

4 blocks cream cheese, softened

1 – 7 oz. jar marshmallow fluff

1 c powdered sugar

½ c heavy cream

Crust – crumble some of cookies. Put in bottom of spring form pan. Put some of ¼ pieces around the side.

Cheese cake filling – beat cream cheese until smooth. Add fluff, add powdered sugar, add cream.  Beat for 3 to 5 minutes. Pour over crust. Put in refrigerator until firm.
