Well it’s already the first week in May, and I hope all is going good for you.

This week I’m going to do some meals that don’t cost a lot to fix. 


1 cup uncooked elbow macaroni 

1 pound ground beef

1 medium onion chopped

1 can Italian stewed tomatoes

1/4 cup ketchup

1 cup  (4 ounces) cheddar cheese

Cook pasta, then drain in a large skillet. Brown the meat with the onion and drain. Season with salt and pepper. Stir in tomatoes, ketchup and pasta and heat. Pour in dish and top with cheese. Makes four servings.


1 pound ground beef

1 onion sliced thin

2 t fresh ginger

1 16-ounce package mixed frozen vegetables

6 to 8 T of bottled sweet and sour sauce 

cooked rice 

Place meat, onion and ginger in a large skillet and cook until no longer pink. Breaking the meat up, pour off drippings. Stir in frozen vegetables and keep stirring and heating for three to four minutes. Serve this over cooked rice when done. Will make four servings.
