Well, Mother Nature gave us some nice days last week, but it’s going to get cooler in the next few days. This weather, when cool, is good for chili. I always make lots to freeze for later on.

This one comes from a good friend who now lives in Australia with her husband and son.

Make your own favorite chili, then make this and put on top of the chili and bake.

 

CORN BREAD BATTER

1 large egg

1 ½ c milk

1 ½ c cornmeal

1 c flour

2 T brown sugar

1 T salt

½ t baking powder

½ t baking soda

5 T melted butter, cooler

Mix all well. Then you can add:

Jalapeno pepper, chopped

1 can corn

Cheese (shredded hot pepper jack)

Fix your chili. Spread in bottom of baking dish or cast iron pan. Spoon the corn bread mix over the chili. Add more cheese on top. Bake at 325 degrees for 50 minutes. This is really good.
