FRIED POTATOES AND ONIONS, PEPPER WITH SMOKED SAUSAGE
2 lbs. baby red potatoes, cut into 1 to 1-1/2 inch pieces
1 onion, sliced in half circles
1 red bell pepper, cut in 1 inch pieces
8 oz. smoked sausages, cut in 1 inch pieces
¼ cup olive oil
4 garlic cloves, minced
1 t. thyme
1 t dry spice blend of salt, ground pepper, fresh herbs, parsley, thyme, chives and dill
Preheat oven to 475 degrees. Use large baking sheet. Scrub potatoes and cut into 1-1/2 inch pieces. Place them in pot covered with water. Bring to a boil, simmer and cook until done. Drain.
Mix together and simmer 30 minutes.
AIR FRYER JALAPEÑO POPPERS
8 jalapeños, halved and seeded
1 block cream cheese
1-24 oz. pkg. bacon, seasoning, garlic salt, pepper
½ cup shredded cheese
¼ cup barbecue sauce
1 or 2 tortilla or 2 pieces bread for bottom of fryer.
Half the jalapenos lengthwise. Scoop out seeds. Mix cream cheese with ½ cup shredded cheese and seasonings. Then put in the peppers. Wrap with one slice bacon. Once ready to cook, place bread in the fryer and place jalapenos on it. Bake them with barbecue sauce. Cook at 360 degrees for 12 to 14 minutes. No turning required.
