I sure am enjoying this weather. It’s not too cold yet, but I bet it’s going to get cold. 

This one is so good and so easy. Make lots and share. 


2 c sugar

4 T Hershey’s coco

1 stick butter

3 oz. Carnation evaporated milk

1 t vanilla

Nuts are optional

Mix sugar and coco in a saucepan. Then add butter and can of milk. Stir until the mixture starts to boil. Stir continuously for 7 minutes, then remove from heat and add vanilla. Stir continuously for 3 minutes. Pour in a buttered dish to set. Great fudge in 20 minutes. 


1 T oil

1 c chopped onion

½ c chopped sweet pepper

½ c celery

1 T minced garlic

1 ½ lb. ground beef

2 T all purpose flour

1 ½ c beef stock 

3 – 11.5 oz. cans V8 tomato juice

1 can diced tomatoes

2 large potatoes, peeled, diced

2 c diced carrots

2 c corn

2 c green beans

Dash Worcestershire sauce

¼ t hot sauce

1 t Kosher salt

¼ t pepper

In bottom of large pot, heat the oil. Add onions, pepper and celery and cook until soft — about 4 minutes. Add garlic and ground beef. Cook until meat is brown. Drain off fat. Sprinkle meat with flour and cook for 3 minutes. Add beef stock and juice, diced tomatoes. Stir in potatoes, carrots, corn, beans and the Worcestershire sauce and hot sauce. Stir, cover and cook on low heat 1 ½ to 2 hours until veggies are done. Taste and season with salt and pepper. It can be served over hot rice or mashed potatoes. Serve with cornbread or biscuits. Makes six to eight servings.
