Well, this has been a crazy week. A little rain, snow and sun. This week I’m doing some I hope you like.

 

LEMON BLUEBERRY POUND CAKE

1 box lemon cake mix

½ c oil

½ c milk

1 box lemon pudding mix

4 eggs 1 c sour cream

1 c blueberries

Combine the cake mix, pudding mix, oil, milk, eggs and sour cream. Mix until smooth. Fold in the berries. Grease a Bundt pan and bake for 35-40 minutes. 

Glaze for cake

1 ½ c powdered sugar

3 T lemon juice

Whisk together until smooth. Pour over the cake.

 

APPLE PIE CAKE

¼ t salt

½ c butter

2 ½ c flour

1 c brown sugar

1 c walnuts, chopped

1 t cinnamon

1 t baking powder

1 t baking soda

1 egg

1 c oil

Preheat oven to 350 degrees. Mix everything but cinnamon. Fold in apples. Pour in a 9x13 dish that has been sprayed. Bake for 45 minutes. Drizzle cake with honey.
