I’m loving this cool weather. I think fall is my favorite time of the year because there’s lots of good food to enjoy. I hope you enjoy these this week. 

PUMPKIN BREAD

3 cups sugar

1 cup oil

3 eggs

2/3 cups water

3 cups flour

1 t cinnamon

1-1/2 t salt

1 t nutmeg

1 t baking soda

1 t baking powder

2 cups pumpkin

1 cup chopped nuts

Beat together sugar, oil, eggs, sift flour, cinnamon, salt, nutmeg, baking soda and baking powder. Add dry ingredients with water, beating after each addition. Add pumpkin, nuts and stir well. Pour into greased loaf pan, and bake 350 for 90 minutes.

HAM TAHITIAN SUPPER

½ cup brown sugar

2 t cornstarch

15-1/4 oz. can pineapple chunks (save syrup)

1 cup water

2 t vinegar

1 green pepper cut into strips

1-1/2 to 2 cups cubed ham

3 cups cooked hot rice

Combine brown sugar and cornstarch in pan. Add the drained pineapple syrup, water and vinegar. Cook, stirring constantly until clear and thick, and stir in pineapple, green peppers and ham. Cook for 10 minutes and serve over hot rice.
