Well, it is 2022 — a brand new year. Let’s all pray it will be a great year. I wish you all great things in 2022.

Do you like quiches? I sure do. They are easy to fix and so good when I make them. I always make several so I can freeze one or two to have for later. 

SAUSAGE, RED PEPPER QUICHE

¾ lb. sweet Italian sausage, chopped

2 red peppers, chopped fine

9 inch pie crust

¼ t salt

¼ c cheddar cheese, shredded

2 T grated Parmesean cheese

2 eggs

½ c half and half

3 T milk

Place sausage and pepper in skillet and cook for about seven minutes. Drain. Place pie crust in a pie plate. Top with sausage and pepper mix. In a small bowl, mix salt, cheese together and sprinkle over the sausage mixture. Whisk together the eggs, half and half, and milk. Pour into crust. Bake at 425 for 15 minutes. Reduce heat and bake at 350 degrees for 10 minutes. Can serve this with crispy salad.
