I hope you all had a great Easter with many blessings. I haven’t fixed this one yet, but I’m going to. I love chicken salad. This one is something different.Â
STREET CORN CHICKEN SALAD
3 c chopped, cooked chicken
2 ears corn, kernels removed
1 T red or green onion, chopped
1 T Cotija cheese, crumbled
1 T fresh cilantro, chopped
1/6 t ground red chili powder
Combine the chicken, corn, onion, Cotija and cilantro in large mixing bowl. Stir mayonnaise, hot sauce, lime juice, sugar, salt, pepper and chili powder. Pour over the chicken to coat and mix well. Serve immediately or refrigerate until ready to serve. This will keep up to three days nicely.
