I was looking at some of my cookbooks trying to find something cool to fix when it’s so hot. I don’t like to cook a lot. I hope you will enjoy these.
1 head lettuce
1 lb. hamburger or ground turkey
8 ounces shredded cheddar cheese
1 can kidney beans, drained
1 chopped onion
4 medium tomatoes chopped
1 bag Doritos
1 package taco seasoning
8 ounces Thousand Island dressing
2 T sugar
1 T taco seasoning, reserve 1 T
1 T taco sauce
Brown the meat. Add the taco seasoning (remember to reserve 1 T for dressing). Let meat cool. Add lettuce, hamburger, cheese, beans, onion and tomato in a large container. Put cheese on top and chill. For dressing, mix Thousand Island, sugar, taco seasoning and taco sauce. Refrigerate until serving time. Just before serving, crush and add chips and dressing and toss.
CRANBERRY SOUR CREAM SALAD
1 - 3 ounce package cherry Jell-O
1 cup hot water
1 pound can whole cranberry sauce
1/2 cup diced celery
1/2 cup chopped pecans
1 cup sour cream
Dissolve Jell-O in hot water. Let chill slightly until thickened. Break up cranberry sauce and add to gelatin. Add the pecans. Pour half of mixture into mold. Spread sour cream and then remaining cranberry sauce mixture on top. Chill. Serves six to eight.
