I love this time of year with cooler weather and fall colors. This week I’m going to do some I hope you will like.

TAFFY APPLE SALAD

20 oz. can crushed pineapple

2 c mini-marshmallows

2 T flour

1 T vinegar

½ c sugar

3 cups diced apples (your choice) 

1 ½ c Spanish peanuts

8 oz. cool whip

Drain pineapple and set juice aside. Mix pineapple and marshmallows. Refrigerate overnight. In a saucepan, mix juice, flour, vinegar and sugar. Cook on low heat until thickened. Cool and refrigerate. In morning, mix pineapple mixture and sauce. Fold in cool whip, apples and peanuts.

OVEN BAKED BARBECUE CHOPS

4 pounds meat - chops, ribs, or roast

1 c sliced onions

1 c water

1 ½ t salt

½ t pepper

1 T mustard

½ c vinegar

1 c ketchup

1 T Worcestershire sauce

¾ c brown sugar 

Place meat in large roaster or pot. Slice onions over it. Combine all other ingredients. Mix well. Then pour over the meat. Cover and bake 2 ½ hours at 350 degrees. Spoon sauce over meat occasionally. Remove cover and bake 10 minutes more.
