Well, this weekend we had lots of ice.

We owe a big thank you to all who had to be out working trying to restore power and rescue trying keep all safe.

Just a note here to the lady who called about the cake last week: It was correct in the paper. I am sorry it did not turn out right for you. If you make anything with milk, just add little extra next time and it might help. 

TENNESSEE HUMMINGBIRD CAKE

2 c sugar

1 t baking soda

½ t salt

1 ½ t cinnamon

3 eggs

1 c oil

3 c plain flour

2 ½ c chopped bananas

2 c nuts – your choice – pecan or walnuts

1 – 10 oz. can crushed pineapple

Stir all dry ingredients. Set aside. Beat eggs. Add oil. Add dry ingredients and beat about two minutes. Add bananas, pineapple and nuts and fold in. Do not beat. Bake at 350 degrees for 45 minutes. Can cook in 9-inch pans or Bundt pan. 

CREAM CHEESE ICING 

2 – 8 oz. pkg. cream cheese, softened

1 c butter or margarine, softened

2 - 16 oz. pkgs. powdered sugar

2 t vanilla

Nuts – optional

Mix well and spread on cake.
