Well, another Christmas has passed. It soon will be a new year. I sure hope the new year will be a lot better for all with good health and many blessings. 

This week I’m doing one with leftover turkey. 

TURKEY-CRANBERRY CROISSANTS

1 — 8 oz. cream cheese, softened

¼ c marmalade

½ c chopped pecans

6 large croissants

Lettuce leaves

1 lb. thin sliced turkey

¾ c whole cranberry sauce

Combine first three ingredients. Stir well. Spread evenly on cut side of croissants. Place turkey and lettuce on it. Spread with cranberry sauce and cover with tops of bread. Makes six servings. 

COLLARD GREEN SALAD

2 lbs. Fresh collard greens — washed and shredded

3 small carrots, shredded

1 onion, minced

3 garlic cloves, minced

½ t dried oregano

3 T apple cider vinegar

¼ c olive oil

Combine all ingredients in large bowl, tossing. Cover and chill one hour. Makes eight to 10 servings.
