Before I begin, I would like to say happy Thanksgiving to you all. I know this has been a hard year on us all, but we need to be thankful for all our blessings even in hard times. Blessings to you all. 


1 ½ c chopped celery

¾ c chopped onion

¾ c butter, cubed

9 c day old bread

3 c fine chopped apples (your choice)

¾ c raisins

1 ½ t salt

 1 ½ t dried thyme

½ t rubbed sage

¼ t pepper

1 turkey, 14 to 16 pounds

Additional butter melted

Saute the celery and onion until tender. Remove from heat. Stir in bread crumbs, apples, raisins, salt, thyme, sage and pepper. Just before baking, loosely stuff the turkey with 4 cups of the stuffing. Place the remaining stuffing in a 2-quart baking dish. Refrigerate until ready to bake. Skewer the turkey opening and tie the wings and drumsticks together. Place breast side up on roasting pan. Brush with melted butter. Bake uncovered at 325 degrees for 3 ¾ or 4 hours. Baste occasionally with pan drippings. Cover with loose foil if browns to quick. Bake the other pan of stuffing for 20 minutes. Use the pan dripping to make the gravy. Makes 10-12 servings.
