Well, the kids are back in school. Watch for them. Please pray for them, and the teachers, that they have a great year. I’m going to do some that will be good when it’s so hot. 

YOGURT GARDEN SALAD

1 – 3 oz. package lemon Jell-O

½ t salt

1 c boiling water

1 T vinegar

1 – 8 oz. container plain yogurt

1 c grated carrots

½ c chopped green peppers

1 T chopped chives

Dissolve gelatin and salt in boiling water. Add vinegar and chill until slightly thick. Blend in yogurt and fold in carrots, green peppers and chives. Pour in 2 ½ to 3 cups mold. Chill until firm for about three hours. Makes five servings.  

MOLDED CHICKEN AND GRAPE SALAD

1 package Jell-O, lemon or lime

½ t salt

1 c boiling water

1/8 t tarragon – optional

¾ c cold water

2 t lemon juice

1 c diced chicken or turkey

¼ lb. green or purple grapes – seeded, halved

½ c diced celery

Dissolve gelatin and salt in boiling water. Add cold water and lemon juice and chill until thick. Stir in remaining ingredients. Spoon into a four-cup mold. Chill about four hours. Unmold and serve with mayonnaise. Makes 3 ½ cups for four servings.
